  • Immerse yourself in the world of kimchi making with Stefan, a fermentation enthusiast and biomedical scientist with a passion for Korean cuisine! After living in South Korea, Stefan fell in love with the flavours and techniques behind kimchi and he's here to share this craft with you.

    The workshop starts with a tasting session where you'll sample kimchi at different stages of fermentation and discover how the flavours change over time. Stefan will guide you through the basics of fermentation, sharing his scientific insights along the way. Then it's hands-on time as you make your own batch of kimchi from scratch, layering spices, fresh vegetables and traditional ingredients to achieve authentic flavours.

    Before you leave, Stefan will provide you with recipes that show just how versatile kimchi can be in the kitchen. For those who want an even more complete experience, additional food options are available - just let us know when you book.

    Meet Stefan, a passionate artisan whose journey from the lab to the kitchen is anything but ordinary! Originally a biomedical scientist, Stefan's love of food led him to spend nine months in the kitchen at Rochelle Canteen during his PhD, combining his scientific mind with his culinary skills. But it was during a year in South Korea that Stefan discovered his true culinary fascination: kimchi and the art of fermentation. Here, science and food collided, igniting a passion that would shape his future.

    With a natural talent for teaching, Stefan began hosting workshops that started as small gatherings with friends and family. Now he loves sharing his knowledge of fermentation with a wider audience, bringing people together to explore flavours and techniques in a way that's both fun and informative. In Stefan's workshops, participants are not only introduced to the basics of fermentation, but are encouraged to experiment, ask questions and share in the magic that happens when science meets food.
